key lime definitely isn't green eggs or ham, but they were still green, and that's what i wanted :).
here's the yummy recipe...
KEY LIME CUPCAKES
1 cup all purpose flour
3/4 cup self-rising flour
1/2 cup (1 stick) unsalted butter, room temperature
1 1/4 cup sugar
2 large eggs
2 1/2 tablespoons fresh lime juice
1 tablespoon finely grated lime peel
1/4 teaspoon neon-green food coloring
3/4 cup buttermilk

1 8-ounce package cream cheese, room temperature
1 1/2 cups powdered sugar
1/2 cup (1 stick) unsalted butter, room temperature
1 tablespoon finely grated lime peel
1/2 teaspoon vanilla extract

1 1/2 cups powdered sugar
1/2 cup (1 stick) unsalted butter, room temperature

Preparation
CUPCAKES
Preheat oven to 350°F. Line standard muffin pan with 12 paper liners. Whisk both flours in medium bowl. Beat butter in large bowl until smooth. Add sugar; beat to blend. Beat in eggs 1 at a time, then next 3 ingredients (batter may look curdled). Beat in flour mixture in 3 additions alternately with buttermilk in 2 additions. Spoon scant 1/3 cup batter into each liner.
Bake cupcakes until tester inserted into center comes out clean, 20 to 25 minutes. Cool 10 minutes. Remove from pan; cool.

I found your site actually through getting ideas for our 80's party...and started looking at your other themed parties. Naturally I was drawn to the Dr. Seuss party, being a huge fan, and these cup cakes caught my eye because a friend had lime cake at their wedding (and I was looking for a recipe!) Of course I had to try your recipe and they turned out great! So many compliments! I have made them twice and I am currently baking your raspberry lemonade cup cakes (couldn't find raspberry lemonade so I used two packs of raspberry plus some lemon juice.

These are very yummy. But I must have done something wrong, because my cupcakes ended up kinda dense. But they are DELICIOUS anyways!! And the icing......YUMMY too!!
My husband and his friends always go to this one spot to get key lime cupcakes, but we always want them after business hours so I decided to try your recipe...they LOVED them! I added some key lime juice to the frosting because I didn't have enough lime zest, but it turned out great! Thanks for sharing!
