guitar cupcakes / guitar cupcake cake
i made this guitar cupcake cake for my bro in law's 19th bday. he loves playing the guitar...so this is what i came up with. i was looking through my house for something that would work as guitar strings, and found these retro candy dots..they were perfect! i then found some yellow spree's & put them on for more added fun. the lightning bolts are even edible {i used a lightning bolt cookie cutter and chocolate candy melts}. if you look close the ribbon says "rock king" {i got it at michaels last year along with the silver "rocker" letters}.Saturday, September 12, 2009

shark cupcakes
i made the shark fins out of card stock.
and as for the cupcakes..they were pretty yummy! pina colada!
here's the cupcake recipe...
ingredients:
1 package yellow cake mix
1 package instant vanilla pudding and pie filling mix
3/4 cup Coco Lopez Cream of Coconut
1/2 cup white grape juice {or rum, if you drink alcohol}
1/3 cup vegetable oil
4 eggs
1 can crushed pineapple, well drained
1/2 cup shredded coconut
preparation:
preheat oven to 350°. in a large mixing bowl, combine cake mix, pudding mix, 1/2 cup cream of coconut, 1/2 cup white grape juice, oil, and eggs. beat on medium speed 2 minutes. Stir in drained crushed pineapple & shredded coconut. divide into cupcake liners. cook for 15-18 minutes.

chocolate glaze cupcakes
CHOCOLATE GLAZE FROSTING {dries smooth, hard, and shiny}
6 tablespoons cocoa
4 tablespoons butter
2 cups powdered sugar
1 teaspoon vanilla
1-Melt your butter.
2-Add all other ingredients.
3-Stir until well mixed and smooth.
4-Add more water if you want it thinner at this point.
5-If using as icing and you think it's too thick just let it sit for a few minutes.

chocolate banana cream daisy cupcakes
here's my recipe:
BANANA CREAM FROSTING
1/2 cup butter {1 stick}, softened
1 8 oz package of cream cheese, softened
1 tsp vanilla
4 cups powdered sugar
1 small package of banana pudding mix
beat the butter, cream cheese, & vanilla together. add the powdered sugar and banana pudding mix and beat until well blended.

tool man cupcakes
i made the saws and hammers out of candy melts {and a soap mold}. the frosting was my own creation....mint chocolate {i put brown sprinkles on top}. it was yum!
here's the recipe:
MINT CHOCOLATE FROSTING
1/2 c {1 stick) butter, softened
2-3 cups powdered sugar {depends on how thick you want the frosting}
1/3 cup cocoa powder
2 tsp mint extract {or add more until you get the desired flavor, it also depends on how strong your mint extract is}
mix well :)

cat in the hat cupcakes
here's the final dr seuss cupcakes i made for my friends baby shower a few weeks ago. to see more of the fun shower go here.the toppers are supposed to be the cat's HAT'S. i made them out of white chocolate covered oreo's {i used wilton's candy melts and a cookie mold}, cherry life savers, and mint savers {stuck together with white frosting}. i made the actual cat in the hat toppers out of magnets.

here's the second batch of cupcakes i made for the dr. seuss shower {to see all pics of the fun shower go here}. i made the toppers out of magnets!key lime definitely isn't green eggs or ham, but they were still green, and that's what i wanted :).
here's the yummy recipe...
KEY LIME CUPCAKES
1 cup all purpose flour
3/4 cup self-rising flour
1/2 cup (1 stick) unsalted butter, room temperature
1 1/4 cup sugar
2 large eggs
2 1/2 tablespoons fresh lime juice
1 tablespoon finely grated lime peel
1/4 teaspoon neon-green food coloring
3/4 cup buttermilk

Preheat oven to 350°F. Line standard muffin pan with 12 paper liners. Whisk both flours in medium bowl. Beat butter in large bowl until smooth. Add sugar; beat to blend. Beat in eggs 1 at a time, then next 3 ingredients (batter may look curdled). Beat in flour mixture in 3 additions alternately with buttermilk in 2 additions. Spoon scant 1/3 cup batter into each liner.
Bake cupcakes until tester inserted into center comes out clean, 20 to 25 minutes. Cool 10 minutes. Remove from pan; cool.

horton hears a who cupcakes

i made the toppers out of magnets! the fluff {for the clover in the book} is cotton candy.
here's the YUMMY recipe {adapted from howtoeatacupcake.net}
raspberry lemonade cupcakes
makes 12
1/2 cup (1 stick) unsalted butter, at room temp
3/4 cup sugar
3 large eggs, at room temp
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
3/4 cup milk
2 packets Crystal Light® On The Go Raspberry Lemonade mix
zest of one lemon
Frosting4 oz. Neufchâtel cheese (or cream cheese), at room temp
1/2 cup (1 stick) unsalted butter, at room temp
1 1/2 cups confectioners' sugar
2 teaspoons water
1 packet Crystal Light® On The Go Raspberry Lemonade mix
1. Preheat oven to 350 F. Line a 12-cup muffin pan with paper liners.
2. In a small bowl, whisk or sift together flour, baking powder, and salt.
3. In a large bowl, beat butter, sugar, and lemon zest with an electric mixer on high speed for 2 minutes.
4. Add eggs one at a time, beating on high speed for 30 seconds between each addition. Scrape sides of the bowl occasionally with a rubber spatula.
5. In a measuring cup, combine milk and lemonade. Mix well.
6. Add flour mixture alternately with milk mixture, beginning and ending with the flour. (You should have 3 additions of flour and 2 additions of milk.) Mix just until flour is incorporated.
7. Divide batter among muffin cups. Bake for 16-18 minutes, or until a toothpick inserted in the center comes out clean (a few crumbs are fine). Cool on a wire rack. When cupcakes are completely cool, make the frosting.
8. In a large bowl, beat cream cheese and butter with an electric mixer on high speed for 20 seconds. Slowly add confectioners' sugar 1/2 cup at a time, beating on medium speed until combined.
9. In a small measuring cup, mix water and lemonade until completely dissolved. Add lemonade mixture to the large bowl. Beat on high speed until frosting is thick and creamy.

4th of july cupcakes
i made these cupcakes with a white cake recipe and a cheesecake pudding mix. they were yum! i frosted them with homemade butter cream frosting and added red, white, & blue nonpareils. you can't forget the adorable toppers and cupcake sleeves i put together via paper and cake {they sell darling printables}. happy 4th of july!!!Monday, June 29, 2009
cotton candy cupcakes
how to:
first i added 1 1/2 containers of blueberry yogurt to my white cake batter...
then added a little cotton candy flavoring {you can also add actual cotton candy to the batter, i just didn't have any on hand}...
the frosting was cream cheese with cotton candy flavoring {and blue food coloring gel}.
after all was said and done i rolled the edges in clear candy sprinkles & added a cotton candy topper {found on ebay}.

superman pancake cupcakes!
for fathers day this year we had a 'superdad' day. i made some raspberry muffins and pancake cupcakes for breakfast for my hubby. i had these adorable cupcake toppers that i had to use..but since everything was a surprise in the morning i didn't want to make cupcakes for breakfast! i got the idea from my friend, Lyndsey {kitchendoughdough}. so fun, huh?!i put whipped cream on top...and added melted butter and syrup when eating 'em. delicious pancakes! my kids loved them, too! yum~
